Can you guys give me some vegetable recipes? I'm not talking recipes for a main dish, just a different (or any) way to make fresh veggies. I seriously don't even know how to grill them up really. I went to the local Farmer's Market and the aparagus and artichoke and mushrooms and string beans and everything looked good but all I bought was fruit because I had no idea what to do with all that stuff.
For asparagus, rinse and snap off woody ends, then put two skewers (pre-soaked) through a series of 6 or so spears. Brush with olive oil and grill (on an outdoor grill or on a grill pan inside) until just tender.
For fresh beans, snap or cut of any tough ends and cut in half. Dice a couple of pieces of bacon (pork or turkey) and fry until crispy - sautee beans in olive oil and drippings from bacon until beans are tender. Add bacon back to pan and toss with beans, serve.
I have never eaten an artichoke in my entire life, so I can't help ya with that one! You can also steam asparagus (literally takes 2-3 minutes) and beans (take 5-8 min or so), and squeeze some lemon on them too. Yum!

Artichokes are easy. I usually don't do anything to mine but steam it for about 20 min. or so. Then you can squeeze a little lemon over it or dip it in mayo (my favorite, but not terribly healthy. )
I like cutting up eggplant, red peppers and mushrooms. spreading them on a rimmed cookie sheet, throw some fresh garlic on top, drizzle with olive oil. Bake for 20 min @ 400 degrees.
You can eat as is or toss w/pasta or put on a baguette (w/cheese)
