Ok, so this is the lazy way of me giving you a recipe
Tonight I made a pretty healthy dinner in under 10 minutes. Yay. Here's what I did:
Made some pasta (the spiral noodles kind)
Fried up some green peppers and tomatoes (cut up into small chunks) with some olive oil and basil (not fresh..mine keeps dying) and breadcrumbs (small amount, only like a tablespoon or two)
Mixed the plain pasta with the fried up veggies and breadcrumbs. Then I drizzled some vinagerette over it (fat free is good) and added some feta cheese
All done. I'm not sure what you like, but I made this tonight and it was so good...plus I didn't have much in the fridge so this was perfect.

Fairywings, I added some tuna chunks to your recipe, and used parmesean cheese and fat free Italian dressing, because I didn't have feta cheese or a vinegarette. It was the best thing I've ever tasted. I love you.

A bowl of good quality frozen veggies(brand does matter, there are good and bad) topped with large frozen cooked shrimp(I buy these in large bags when they go on sale) I microwaved it and poured on some Bragg's(soy stuff) and enjoyed!!
Also, i use the same stuff for a quick stir fry, just heat some olive oil in the pan, throw in the veggies and shrimp, and flavor, lately I have been using curry. Just add some water and mix in the curry. Really good
I also do this with tofu, TVP, or tempeh in place of the shrimp.
Oh!! Pita pizza. Pita bread topped with sauce and choice of toppings, broil for a couple of minutes.

I made this tonight! Very YUMMY! I used italian dressing and the parmessan cheese because thats what I had. I ate it with some chopped beef on the side.
Fairywings--I typed your post into an easy recipe format (I hope you don't mind), so that it would be easier for me (and others) to follow. I saved it into my recipe file at work. Let me know what you think--I had to guess a little on the amounts.
Pasta with Fried Peppers and Tomatoes

Ingredients:
2 green bell peppers, sliced
2 tomatoes, chopped into small chunks
1 TBS olive oil
1-2 TBS breadcrumbs
¼ c. fresh basil or 1 TBS dried basil
1-2 TBS FF Vinaigrette Dressing
1 c. Reduced Fat feta cheese
Spiral pasta
Instructions:
1. Cook pasta until al dente
2. Fry the peppers and tomatoes with olive oil, basil and breadcrumbs
3. Mix pasta with veggies and breadcrumbs.
4. Drizzle with 1-2 TBS FF vinaigrette dressing, and add feta cheese
Comments: can substitute FF Italian dressing for FF Vinaigrette and Parmesan for the feta. Can add grilled chicken or beef
