Another cookie thread

I'm making donations to a local food bank for friends for xmas. I'd like to bake a batch of cookies and wrap them up to give with the donation card. Any suggestions? It can't be cookies where you have to roll out and use cookie cutters because I don't have a rolling pin or cookie cutters.


Any tasty, easy cookie recipes for a kitchen-challenged fellow STer?

I made 3, yes THREE, different batches of cookies last night.  I was up until ~3am and it kind of sucked, but I am glad I got it over with.  The easiest ones that I made were the peanut butter hershey kiss cookies - I am sure you know the kind?


Anyway, I can post a recipe later tonight if you would like.  My mom's recipe is really good.  Beware - I googled "peanut butter hershey kiss cookie" the other day and just made the first recipe that I found and they were super poopy and gross.

I think that is a really sweet idea.  However, one thing you might want to check prior to going to all that work is whether they can accept homemade cookies. 


Crazy, I know, but many foodbanks can't accept homemade goods, only pre-packaged food.

Tara - My mom just sent me a recipe for a peanut butter cookie thing that I think I'll try. Basically you buy the slice and bake peanut butter cookies and the little candy snickers. Then you wrap the cookies around the candies and bake them like that.

It sounds really yummy and super easy, so I think I'll go that route. And then maybe a healthier recipe for my health-conscious friends.

Jah - When I read your response, I realized I wrote it all confusing like. I meant I donated to a local food bank in my friends' names. I get cards from the food bank that I give to my friends that say I donated in their names. I wanted to bake cookies to go with the cards I give to my friends. I'm not sure the local food bank (or my friends for that matter!) would appreciate my attempt to feed the hungry with slice and bake cookies!!

Blubirde--Those sounds really good and fast!  I'm going to try that.  Is that all there is to it or is there an actual recipe?  Also, another idea I thought I'd throw out there is peppermint bark--I love it and it seems like it would be pretty easy to make.  Let me know if you would like the recipe--I found one on another forum but haven't tried it yet.

I'd love the recipe for peppermint bark. I'm cooking tomorrow night so I'm getting ingredients today. (Yeah right - I'll be buying them tomorrow before I start cooking. )


As for the snickers one, you don't have to use pb cookie dough, you can use any kind, I just like the pb cookie dough the best. The only thing my mom said was that you cook the cookies just a bit longer than the package says, to make sure the snickers melt in the middle. It's supposed to be like a fried snickers or something, only better. We'll see!

Thanks, Blubirde!  here is the peppermint bark recipe, and the notes of the poster from the forum where I got it (i haven't made it):


Peppermint Bark



Crushed candy canes, to yield 1 cup
2 pounds white chocolate
Peppermint flavorings, optional

Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)


 


This one is from Paula Deen. It is so good and really easy. I put dark chocolate strips on top too.

You think you could do this one with regular chocolate instead of white chocolate? (Just a personal thing, I'm not a fan of white chocolate.) Or would it ruin the effect?


One more thing - what's a double broiler and what do you use if you don't have one?

I always use my microwave -- usually works if you go in small increments.

Blubirde--I think most peppermint bark recipes have some white chocolate in them so that it looks prettier with the candy cane chunks in it.  I've seen some storebought p bark layered with white on top and regular milk chocolate on the botton, but I'm not sure how you could do that.  I thought this one looked easy and I like that it is from Paula Deen.  I think I might try it this yr, if so I'll let you know how it goes.


I'm not sure why you would need a double boiler for this recipe or which level you would use.  Does anyone know?  halleybird??

Ha! That's what I thought too! I'm looking forward to hammering some things tonight. I'm making both the peppermint bark and the snickers cookies things tonight so I'll let y'all know how it goes.
