I'm really really sick of everything I usually make as a "side" - we love corn on the cob & I do green beans w/new potatoes a lot. We like those Lipton pasta side things, but they are just so fattening....and I'm not really a rice girl. I also have bought those country crock potato & mac & cheese sides & they are SOOO good, but again with the fattening. I have been making couscous (because how much fun is that to say!) but I've about worn that out too...
What do you make that is relatively easy & different than the above? We aren't that picky, but my hubby doesn't do tomatoes or fruit of any kind.

different salads---pasta, lettuce salads, taboule salad
vege stir fry--mushrooms, brocolli, aspagarus, squash, zuchinni or variation of any of those--a little olive oil, pepper, garlic, ginger root and maybe a dash of soy sauce--yum!
sweet potatoes--those microwaves ones wrapped in the plastic in the produce section are really good
stove top stuffing
homemade applesauce--really easy
mahatma saffron rice--it is pretty good
add something to your couscous--veges, mushrooms, soy, etc.

I normally just buy veggies that are on sale at the store. I then look online and find some recipes. Also we do mash potatoes, mac and cheese, refried beans.
my latest favorite "easy" veggie side dish is just plain ol' frozen spinach, i usually buy the green giant kind, in the little box. you get a ton, and then i spice it up by adding EVOO and sea salt or stirring in butter and nutmeg (a little goes a long way!).
you can also make mashed potatoes a little easier, especially if you're just making a small quantity, by baking the potatoes as usual, and then scraping out the insides and just mashing them up with a fork and add milk and butter. then you get to eat the yummy skins (also good with EVOO and sea salt)! it still takes an hour or however long to bake the potatoes, but it's more mindless than peeling, boiling, etc.
