hey - i remember someone here saying they made these b/c they are easy to take to work - how do you do it? just mix up the egg and throw the stuff in and basically fry it? i know this seems like a silly question but i've been wanting to figure out a good way to take eggs to work with me, and i'm not so big on hard-boiled.
Actually I think you put all the stuff in a skillet & put it in the oven & bake it. Actually, my ex used to do this, so I don't know all the details but that's what he did.
Here's a general recipe - I imagine you could throw anything you wanted in it. But I know we did brown / sautee the onions or whatever before throwing it in the oven. I remember that much now.

There are tons of different recipes but basically the main thing is to decide what you want to put in it - usually it should at least have chopped onions and then potatoes or peppers or spinach or maybe just herbs, whatever. Fry up the onions and other ingredients in the pan until it's almost done - if you use potatoes I usually make really small cubes and then cook them in the pan until they just turn brown since they take a while to cook. How many eggs you need will depend on your pan but I think for a medium sized pan you'll probably need 7-8. Scramble the eggs in a bowl and add some salt and pepper and grated cheese if you want. Technically you can just pour the eggs over the other ingredients while the pan is on a low heat and it will be fine but I like to try to spread the potatoes, etc. out a little bit more so I often dump half off the cooked ingredients onto a plate first, add half the eggs to the pan and wait for them to set a bit and then I add the rest of the ingredients and pour more of the egg mixture on top.
Oh also ideally you should do this with a non-stick broiler safe frying pan. You cook the frittata over a low heat until it sets and then stick it in the oven on "broil" until the top gets a little brown. However I have made frittatas in a regular frying pan and waited for everything to set and then tried to flip it over to brown the other side - it's difficult and could get messy but it will turn out ok. I have a brand new nonstick pan which can go in the over up to 400 degrees so I just set the oven to that instead of broiler and it was perfect.
