Does anyone have a really good recipe for pumpkin bread?

not bread, but i keep hearing raves about these pumpkin chip muffins:

2 eggs
2 cups white sugar or splenda
1 (15 ounce) can pumpkin
1 1/2 cups unsweetened applesauce
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon salt
2 cups chocolate chips


preheat oven to 400 degrees!
bake for 16-20 minutes!

they are naturally very chewy and moist due to the applesauce so don't think they are undercooked if you left them in long enough!

This was passed down from my Great Grandma:



  • 1 1/2C + 2T flour           1 1/2C sugar                                    

  • 3/4 t salt                      2 eggs                                

  • 1/2 t nutmeg                 1/2C shortening                                 

  • 1 t baking soda              1 C canned pumpkin

  • 1/2 t cinnamon               1/2C water

Combine dry ingredients, combine wet ingredients and add to dry ones. Bake in a 9x5x3 greased and floured pan @350 degrees for 1 hr.


It comes out super moist.

wicked's recipe is definitely the standard.  try adding raisins and nuts too for some texture and "meatiness!"
