i am having a few friends over for dinner this weekend and was thinking of making a "comfort food" type menu. i have a killer mac&cheese recipe that i make with orrechiette pasta and gruyere and cheddar cheese. it's really rich.
so what shall i serve with it? just a simple green salad? i feel like there should be another course, something with meat maybe.
any ideas? oh, and one more challenge--my oven doesn't work except to broil the top of things (like the mac & cheese)--it's scorching hot and will burn anything else. i do have a barbeque and a stove-top, though.
thanks, indiekitten. that is a good idea, and would be simple. do you think it's blasphemous to use the boneless/skinless breasts for that? or should i really do the old-fashioned bone-in kind and slather it with barbeque sauce? that's how i remember my mom making it when i was little.
I don't think it would be blasphemous at all - that's how i make mine - (with the boneless and skinless)
here's a tip - i like to mix a little beer in w/ my barbecue sauce - it just tastes better somehow! you can use a cheap-y beer for it - sometimes i just get a forty of bud ice and drink the rest (hee hee!)
anyway - also if you do it on the barbecue it helps (if you're going to have the lid down at all) to have a little metal pan of water in there - it keeps the air (and therefore your chicken) moist!
Another cute idea when entertaining is to get some taller pretty or just cute glasses and put bacon wrapped breadsticks in them as a little munchie for your guests. All you do is take the long, skinny, garlic breadsticks, cut a piece of uncooked bacon in half, cover it in parmesan cheese, wrap it around the breadstick in a swirly, and cook them in the microwave for 3 1/2-4 minutes. They are scrumptious and addicting and always a big hit.
