Hey laken! I love it, it's been working out great. Thanks for asking! I have to admit though that I've only done it for two weeks b/c I got sick and then we had our kitchen floors redone so we had no kitchen for a few days. Now, as things get back to normal, I'm going to start up again. I need to do my menu for next week so that I can go to the grocery store this weekend. Let me know if you would like any recipes. The ones that have been successful, besides Christine's pot roast, have been chicken florentine, "beef" enchiladas, & refried bean soup, to name a few. Any interesting things on your menu these days?
Nothing new at all - I have been making that WW chicken cordon bleu that lsubatgirl gave me about to death - it's SO GOOD. I guess i'm just bored with my same old thing & I want it to get cool so I can make some soup or chili & be happy. It's just too dang hot right now for that STILL (77 today, but that's still not soup weather!)
and yes, all of those recipes would be appreciated, if it's not too much trouble - even if you got them from another site & can post a link? I just hate trying recipes blind that nobody ever made - if that makes any sense at all!

It's very seriously good!!!!!! And if I don't feel like pounding out a chicken breast, I do "minis" with chicken tenderloins & just cut up the cheese wedges - and I have also made it without the shake & bake because I didn't have it once & it was still yum yum
Moc Chicken Cordon Bleu 4 4oz chicken breasts 1 package deli sliced ham (2 to 3 slices for one point, I used deli selects) 4 laughing cow cheese wedges 8 toothpicks 1/2 package shake n bake cooking spray.
Heat oven to 400 degrees. Pound chicken breasts to about 1/4" thick. Place 2 to 3 slices of ham on breast and one cheese wedge spread on top. Roll and secure with toothpicks. Place edge side down in sprayed baking dish and sprinkle with shake n bake. Bake 35-45 minutes.
Makes a wonderful dinner for only 5 points per chicken breast!
