I made the slow cooker pot roast recipe yesterday, which came out awesome...we're going to be having it again tonight, but I would like to have it with potatoes and veggies on the side (last night we just had it over mashed potatoes).
Does anyone have any good potato recipes...I was thinking of either cutting them up & stir frying them, or maybe just making baked potatoes, I think the stir fry would go better with the rest of the meal.
For veggies, I was just going to make some frozen veggies, but if anyone has any good, easy recipes that would go well with the rest of the meal, I'm open to suggestions.
I am just starting to cook, so that's why I just have no idea, I've never even made a baked potato!
1 large baking potato Butter or creme fraiche, as an accompaniment
Preheat oven to 425 degrees F. Poke holes in potato and wrap in foil. Bake in oven for 45 to 60 minutes until tender. Serve with butter or creme fraiche.

4 medium thin-skinned white potatoes 3 to 4 tablespoons extra-virgin olive oil 2 tablespoons cayenne pepper sauce 1 teaspoon (1/3 handful) ground thyme or poultry seasoning 1 teaspoon (1/3 handful) sweet paprika 1 teaspoon (1/3 handful) ground cumin Coarse salt and black pepper
Preheat oven to 450 degrees F.
Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.
i cook red skinned potatoes in boiling water with a little salt until soft
or I cut them up into inch chunks or so and put them in a bowl with a little salt, pepper and butter and maybe some dill and put them in the microwave until soft.

I love roasted potatoes, a la a traditional English Sunday Roast.
Prheat oven to 425
take one baking potato per person, peel, cut into 1 inch cubes, place in cold salted water and parboil for 4-5 minutes. Drain, place 1 tablespoon of semolina (or flour) in pot with drained potatoes and give the pan a few shakes.
Place potatoes in a well oiled pan large enough to fit it all in one layer and place in preheated oven for about an hour. When the potatoes are done, the outsides are nice and crispy and the insides are nice and soft.
I got the recipe from one of Nigella Lawson's books.
1lb potatoes, thinly sliced leaves from 3 large sprigs of thyme or rosemary, finely chopped 1lb 9oz pumpkin thinly sliced 1 large clove garlic crushed 2 cups thick (double) cream
Preheat oven to 375 and lightly grease a 10x9 inch gratin dish with a little butter. Arrange a layer of potato in the dish, season with salt, pepper, and herbs, then top with a layer of pumpkin. Continue the layers ending with pumkin. Mix the garlic and cream and pour over the top. Cover the dish with buttered foil and bake for 45 minutes.
Test to see if the gratin is done by inserting a knife in the center, if the slices seem soft, it is cooked. Remove foil and bake for another 15 minutes, or until there is a good brown crust on top. Leave to rest for 10 minutes before serving.
Cheesy Potatoes
1 package frozen hash browns (thawed) 1 container sour cream 1 can cream of mushroom soup 1 brick of cheese (grated) 1 small onion (finally chopped) 1 stick of butter (melted)
Line a 13x9 pan with foil. Mix the 1st five ingredients in a large bowl, spoon into pan. Pour butter over top and bake @ 350° for 1 hour.
A variation on them is to use pepperjack cheese to give it a little spice, omit the onion and butter.
my mom used to make that cheesy potato recipe that Escrime added. it's soooo good. she adds cornflakes on top for crunch and usually makes it with ham on easter. Escrime i've been meaning to call my mom to get that recipe. thanks for posting.
i usually cut up potatoes and put a bit of oil and a packet of onion soup mix and shake them up and bake them for 45 minutes. sooo good.

My favorite potato recipe is so good, but after reading you will see it is obviously not diet-friendly. I double this & make it for family functions - everyone is so disappointed if I don't bring it!
I slice up potatoes really really thin, like scalloped potatoes - enough to almost fill up a 9x9 glass baking dish. Then I add about a 1/4 stick of butter in pats over the top & then pour in a can of cheddar cheese soup. You have to bake it covered for at least a hour - i think the recipe says 1 hr 20 minutes, but it turns out SO yummy.
To slice them I have a fancy slicer from pampered chef, but you can do them on that long/flat section of a cheese grater.
