Apple Picking and Apple Recipes

I'm going apple picking this weekend! Anyone have any good ideas about what to make with the apples I pick?

I am thinking the usual.. like pie, tarte tatin... any other ideas?

i make apple pie all the time for us..
i use the ready made Pillsbury shells

peel and thinly slice 4 or 5 medium apples and put them in a bowl
combine them with
1/2 to 3/4 cup of sugar
tablespoon cinammon
tablespoon lemon juice
nutmeg
allspice
(i throw in some almond slivers sometimes)
you can paint the top crust with egg yolk if you want the crust to turn a nice golden brown color....cut a few slits in it
bake for 45 minutes on 400 or until golden brown

i also make applesauce and baked apples---both are super easy.
let me know if you want those.

1 (14-ounce) package strawberry glaze
1 1/2 cups corn syrup
1 (3-ounce) box cherry gelatin dessert mix
1/2 cup hot water
6 Granny Smith apples, washed and dried
6 wooden candy apple sticks
1 cup chopped nuts

In a saucepan over medium-low heat, combine glaze and corn syrup. Simmer for 20 minutes.

Dilute gelatin mix in hot water and pour in saucepan with glaze. Stir and continue to cook until temperature on a candy thermometer is between 180 and 200 degrees F.

Shove wooden candy sticks into bottom of apples, far enough to secure inside. Dip each apple in syrup and turn until completely coated. Immediately roll bottom half of apples in nuts. When cool arrange on parchment-lined tray.

I don't have any recipes handy but apple crisp is sooooo good.

And homemade applesauce is amazing. Just peel and chop apples, cook with some water(adding more as needed)until it is applesaucey and add spices(mostly cinnamon) Depending on the apples you might not need sugar.

What a timely question...my 2 1/2 year old son got to go apple picking at an orchard last week with his "school".  He even brought home a whole bag of apples!  We made apple cake and apple sauce (store it in the freezer) and also cooked some slices in cinnamon and butter (also store in freezer) for pancake/waffle toppings.

For a quick and easy dessert, I will slice an apple, sprinkle with sugar and cinnamon and put in the microwave for a minute or two until the apples are soft.  Yummy.
