Spinach and Cheese Enchiladas...

So, yesterday at the last moment, I decided to change my plane ticket and stop by KC for a short visit on my way to Cali (it will take 8-14 business days for my things/car to arrive in Cali anyway and I don't take possession of my apt until 10/8, so there was really no rush).  Anyway the reason this is in dining is that tonight I get to stop by one of my fav KC dining establishments Margaritas and have my absolute favorite Spinach and Cheese enchiladas with a side of cheesy been and onions.  Yum, yum, yum!


Can anyone say, 4000 calories are coming at me...and yes, I will be washing it down with their namesake drink!


Anyone else know a place that makes a good spinach and cheese enchilada?
