I agreed to go to Mt Ida Arkansas with the in-laws to dig crystals at Thanksgiving - this all sounded like a really fun idea. I don't mind getting dirty - they even told me that I needed "throw away" clothes because the red clay really doesn't wash out (but how will I look cute???) and that I don't need make up, we are staying in a cabin & there really isn't anyone there at that time. Uh, whatever... It looks lovely, breathtaking scenery etc etc but.....

Now i'm freaking out. My husband said there is no restaurant (or convenience store or anything) that stays open past like 2:00 pm. And the closest fast food is 1 hour away in Hot Springs - we are going there to eat one or two nights, but we can't go there every day. And the cabin has no refrigerator or oven or anything...

I hate to be the chubby girl of the group, but what in the hell are we going to eat? Any suggestions on things we can bring? We are bringing a coleman stove kind of thing, which to me means heating up spaghettios over a fire in a pot - which is cooking in my world.....how am i going to keep my necessary dt coke & wine chilled - and it's become increasingly apparent that both are going to be necessary. (i suggested an ice chest & my husband said "where do you think we are going to find ice"??????)

I really thought this would be fun & i know it is a long time away, but i like to have a plan. And then i'll feel better. Granola bars, wasa bread, crackers, etc....that's a pretty sad plan.

I'm not an outdoorsy girl - I mean really, are any of us??? but see, it looks kinda fun

You're in luck, I'm an outdoorsy girl. I lead backpacking trips in the summer at a Girl Scout camp. A few questions. How are you getting there and how long will you be there? I don't see why you can't just throw an ice chest in the back of the car. It'll keep stuff cool for a few days. So assuming you have an ice chest there's a lot you can make.

Breakfast: cereal if you keep the milk in the ice chest, pancakes from a mix on the stove, eggs and bacon (if you have the ice chest), oatmeal, or just buy a bunch of cinnamon rolls or something. You can also keeps eggs out of refridgeration as long as you keep them somewhere moderately cool. And here's my pancake mix recommendation...

Lunch: Sandwiches, especially if you have an ice chest you can have cheese, vegetables, mayonnause, etc. Peanut buttter and jelly and humus don't really need to be refridgerated. My guess is that you probably won't want to actually cook at lunch.

Dinner: Spaghetti, you could just do sauce from a jar and then throw in extra veggies or meat, soup from a can or powder, grilled sandwiches, burritos, stir fry with rice.

It's my belief that you can make pretty much anything outside that you would make inside as long as you are creative. Will you be able to have a fire? Cause if so you could do lots of cool things. And from my understanding of the situation, I don't see why you can't have an ice chest.

Thanks Maddie - see I don't know why we can't have an ice chest either - other than the fact that we don't own one (well i have a little one that doesn't count, total girl ice chest). And i wasn't sure how long the ice would stay, but i have to assume we could get ice in town, i mean, right??? But if not we can definately get it in Hot Springs & if we go there every other day......I'm not even sure how long we are staying - i know we are driving up Wednesday, but I don't know when we are coming back, since it's a long weekend we really haven't even asked. And I'm not sure about the fire, but if we are going to have one, i'll let you know & you can give me some cool fire stuff to do - they would be uber impressed that the prissy chick knows some fire cooking techniques....

Also, my FIL said we could bring our small microwave, but then everyone laughed at me like "way to rough it" so I told them that was a ridiculous idea, though I appreciated it. I mean, I can rough it like the rest of them

I think it sounds like fun. I saw a place on the travel channel where you can look for rubies! I always thought that might be fun too.
