I am SO SICK of making the same old thing - I put together a weekly meal plan & base my grocery list from this plan, but I just feel like I end up making the same thing week after week - it does vary from time to time, like I'll make the same thing one night for weeks & weeks in a row & then not make it for months on end. I am a firm believer in easy, pretty quick dinners that are relatively healthy - Translated: i need to watch what I eat, my husband doesn't, so I try to not push terribly healthy / yucky stuff on him.
Any ideas? What are your favorites?

You need two skillets and adjust the recipe as follows for more than one person.
Saute one serving of chicken breast with 3/4 cup of salsa until done(more or less depending how much salsa you want). Then place mixture in tortilla (I use low carb burrito size), sprinkle with 1/8 cup of LF cheese mix, fold the burrito in hald, and brown both sides in the second skillet sprayed with Pam/cooking spray. It takes about 3-4 minutes each side. Serve with lowfat/fat free sour cream
Mix a pd of meat with cooked rice, I usually use one of thse Uncle Ben's 10 min bags, onions, garlic or garlic powder, and celery. Stuff into half a green pepper
Sauce
Mix One large can of Tomato Sauce and one large can Tomato soup add seasoning to your taste. I like to Tobasco and red pepper for spicey or just Italian seasoning and more garlic powder for more lid taste.
Poor sauce over stuffed pepper in baking pan, cover with foil and bake for 1 hr at 425. Have with garlic bread. It's yummy and really easy.

I like to use boiled whole wheat pasta, throw on olive oil, a little pesto, quartered tiny from-the-vine tomatoes and a little parmesean. I toss it all in the pot with the pasta I've drained it, give it a minute to get warm, and ta-da. It's fast, fresh and easy.

Trader Joe's has some great easy dinners. I just tried their vegetarian Indian meals (they come in vacuum sealed bags which take 2 minutes to heat up) and it was *delicious*, they also have naan bread in the bread and frozen isles. My bf who hates vegetables loved this vege dish!

#1 shrimp pitas with miracle whip or light mayo (with red chili or red pepper flakes), turkey bacon, lettuce and tomato
basically it's a blt, with turkey bacon, shrimp on a pita with low fat mayo and i add spice
#2 i do the low fat chicken parm too
#3 chicken cesear wraps on w.wheat tortillas, i add chow mein noodles for crunch (brown rice, lettuce, ceasar dressing, onion (optional), asiago cheese, chow mein noodles, chicken)
#4 fajitas..chicken or shrimp or beef with green pepper, onion, fajita mix and w. wheat tortilla
#5 smart pop mini bag popcorn
#6 salmon with lemon pepper seasoning (love it on veggies too), wild rice, salad
#7 crock-pot, mostly in the winter, throw pork, beef, etc...whatever is cheap at the grocery store, with au jus mix, or barbque sauce, etc... and leave it on low for 6 hours and eat for days on it....my bf tends to eat it days later while i eat salad (taco salad...so easy, no recipe necessary)

I love their chicken marsala, its a really yummy frozen lunch.
The chicken perogie (sp?) is a great comfort dish - you just make them like pasta. Oh their frozen French Onion soup is really good. I also like their frozen burritos, fajitas, veggies, french fries... pretty much everything is good and they will often have some new items in the frozen section.
They also have THE BEST ice cream cake ever, Mud Pie - seriously it is so good and only $8 or something.
my favorite are quesadillas...I make bean/cheese/brocolli ones for me and bean/cheese/ and chicken for the hubby...we must eat them 2 or 3 times a week...I also make spanish rice with them to change it up
