Dinner ideas for living on my own!
Permalink Closed

My friends and I are moving into our first apartment down at school and none of us really know how to cook. We are all going to be very busy with class and work and wont be able to spend a lot of timeing making anything too fancy for dinner (or for breakfast or lunch). What did you girls eat when you were in college? Or do you have any ideas for quick meals but that are still good and that i wont easily get sick of (NO easy mac! yuck! ) Thanks a lot!

i like morningstar black bean burgers in mini pita pockets from Trader Joes.  Veggie corn dogs from Morningstar farms too.  I'm not a vegetarian, but really processed meat can make me feel yucky.  Also- tortillas are good- sometimes i scramble an egg, cut up some onions, green peppers, and put some shredded cheese in there and make a breakfast burrito.  You can also make quesadillas or use cold cuts and make wrap sandwiches with the tortillas.  Trader Joes Orange Chicken (frozen bag) plus jasmine microwaveable rice- also very easy.  My favorite salad: mesclun mix (spring mix), sunflower seeds, strawberries (trader joes has frozen ones), gorgonzola cheese, and vinagerette- sooo good, but you have to finish the ingredients in a couple of days!  Apples and baby carrots are a good way to get veggies in there- but try to share produce because it goes bad fast when everyone buys their own things!!  I can't believe how much we've thrown out, I feel terrible.  Lean Cuisines when they are half price at Giant- I love the pizzas and most of them are quite good.  I also really like pizza lunchables.  Frozen Freschetta pizza when its on sale- i tend to buy what's on sale at Giant by making a list from browsing the online circular.  I know you said no easy mac, but the Annies white cheddar macaroni packets are fabulous and 5 for about $2, plus you don't have to throw away any leftovers if you can't finish it or wash any pans.  I also buy healthy cereals (frosted mini wheats for example) because it has fiber and vitamins that I might not get otherwise.

If you have a Trader Joe's nearby, they have a lot of frozen food that's a thousand times better than the stuff in the grocery store, and usually cheaper. Usually they're 2-3 servings, which is perfect for my husband & me.  My favorites are the jasmine rice, chicken tacos, eggplant pasta, meatballs, orange chicken and the little cheese pizzas.

I eat a lot of cereal, bagels, and oatmeal for breakfast.  If this takes to long try toast and peanut butter.  It will keep you going till lunch.

For lunch I usually did sandwich, grapes, pretzels, string cheese, apple/any larger fruit that can keep in your purse for the days I was in class.  Days I wasn't I ate stuff like lean pockets, morningstar farms corn dogs, chicken patty sandwiches, the grillers as a sandwich for lunch at home or work.  Chocolate pudding is something good also.

For dinner I usually do something easy like grilled chicken or turkey burgers on the george foreman grill.  You can also do sasauge on there. Spagetti is always good and you can make leftovers.  I'll check my recipe cards and see if I can find some good easy quick recipes for you.
