My b/f's b-day is this friday and even though we are going out to dinner I want to cook him a very yummy dessert. What are some of your favorites, I want something that I can cook at home, and is not to hard to make, but is really yummy. Any suggestions?
Strawberry shortcake? I usually use Bisquick to make the shortcakes. It's as easy as making biscuits. Then just sliced strawberries and whipped cream. It's one of my favorites this time of year. If he likes oatmeal raisin cookies, I made some last weekend that were probably the best cookie I've ever made (and I cook a LOT). If you want the recipe, let me know. Another good easy desert I like to make is Lemon Poke Cake. It's a light cake that reminds me of summer. It uses a yellow cake mix, lemon pudding and a few other ingredients in the mix. You just bake the cake, then before it cools, poke holes all over it with a fork. Then you pour frosting over the whole cake (it's just a lemon juice/powdered sugar mixture) and it seeps into the cake and forms a glaze on the top. It always gets rave reviews when I make it. I've got that recipe handy too if you want it.
All three of these deserts are very easy and very yummy!

Berry Crisp/Cobbler
I just made this recipe blind (without measuring). The ingredients are so simple and easy that there is alot of room for adjustments.
Crumble topping
3/4 - 1 cup flour
1/2 to 3/4 cup of rolled oats
3/4 brown sugar
1 stick unsalted butter (chilled and cut into 1/2 pieces)
feel free to add more (if you like alot of topping). if you do plan to increase the topping amount, you will probably need more dried goods and not need more butter. also try adding granola to this mixture for extra crunch! chopped walnuts or pecans are also good. you can definitely get creative!
Mix dry ingredients first. Then add in pieces of chilled butter. Work mixture with hands until a crumb-like texture is formed. Chill at least 20 minutes (I put mine in the freezer but you could put it in the fridge). You can make this one day and then prepare the rest another time.
Pie Filling
3/4 - 1lb of rhubarb (cut into 1/2-3/4 inch pieces)
3/4-1lb strawberries (huled and quartered)
1 cup of sugar (you can cut this down or out completely if the berries are ripe and sweet)
2 tablespoons flour
you can really use any kind of fruit or berry! blueberries are great as are apricots and peaches. rhubarb and strawberries are in season now but i sometimes make this with frozen mixed berries.
Prepare fruit. Toss all ingredients together and pour directly into your baking dish. It should line the bottom of the dish but not be overflowing (for the topping). Baking dish (pref. glass), 9" round or 8" square (you can easily adjust this recipe for a larger dish). Remove crumb topping from fridge or freezer. Pour on top of the fruit mixture. Place baking dish on cookie sheet and place in pre-heated oven of 400 degrees.
Bake for 35 minutes or until topping is lightly golden brown. Serve warm or cold. Eat alone or with ice cream or creme fraiche.
