i always just use a mexican rice packet....


anyone have a good recipe or is that just the easiest way?

what kind of spices do you have? my grandma used to make "spanish rice" with rice and ketchup!! ew. but i think if you sauteed some onion and green pepper in olive oil, then added some garlic, oregano, and a healthy dash of paprika, then the rice, a small can of whole tomatoes squished up, and chicken broth, you'd have some tasty mexican rice. you could add cumin and cayenne pepper too. pimentos are also delicious in mexican rice. just throw the jar in (drained) when you throw in the broth.

I use a spanish rice packet and then once it's done I add in one can of Rotel Diced Tomatoes and Green Chilies...it spices it up and it's good!

Don't have a recipe here.  I use Spanish Rice Rice-a-Roni.  I like it.  I add a can of diced tomatoes.  Very easy and tasty.
