I am looking for some sugar-free or low sugar recipes, especially rice pudding. Does anyone know of a good sugar-free recipe site? Or a cookbook? I have a couple of diabetic cookbooks which are great but I would like to expand my collection. I would love to find a recipe for oatcakes like the coffee shop ones. Mmmmm.
Everyone here seems to have a secret cache of great healthy recipes. I would love to know the source!!

I think I have a recipe for sugar free rice pudding at home, I'll post it when I get back Sunday or Monday. I'm not sure, but it *might* use splenda...I don't think so though- I kind of remember it being sweetened with coconut milk.

Splenda makes a cook book. have you seen it? I'll ask my bf what cookbooks his parents use since they are diabetic and are bound to have some low sugar or sugar free recipes. I know they have a sugar free jello pie recipe.

I found the recipe I was thinking of, but it has a bit of bown sugar in it. I've seen brown suagr substitute that you might be able to try though, or maybe try splenda.



  • 3 cups coconut milk

  • 3/4 c. skim milk

  • 1/2 c. white rice

  • 1/4 c. brown sugar

  • 1 t. vanilla extract

  • 1/2 t. cinnamon

combine first 4 igrediants, cover and cook over med. heat until rice is cooked and creamy- about 1 hour. remove from heat- add vanilla and cinnamon. serve warm or chilled with mango slices.

Thanks, ILoveChoo!! That recipe sounds great. I think it would be okay with that itty bitty 1/4 cup of sugar!
