I'm bringing a green salad to an Easter potluck on Sunday. I make them a lot loaded up w/ veggies, but I'm looking for new ideas for yummy green salads. What do you do? What kind of dressing do you like?
I always make this salad from one of Ina's cookbooks that everyone loves!
It's basically some greens (like arugula or baby spinach) tossed in a raspberry type dressing (home-made) and topped with a warmed breaded goat cheese. I also add some crispy shallots too.

Last night my boyfriend's mom made the yummiest salad! It was very light so I ate a ton.
Spinach leaves, a few red onions (cut into rings), avocado, mandarin oranges, strawberries, and almonds. With this dressing (which is also very light):
