What do you put in your green salads?

I'm bringing a green salad to an Easter potluck on Sunday.  I make them a lot loaded up w/ veggies, but I'm looking for new ideas for yummy green salads.  What do you do?  What kind of dressing do you like?

I always make this salad from one of Ina's cookbooks that everyone loves!


It's basically some greens (like arugula or baby spinach) tossed in a raspberry type dressing (home-made) and topped with a warmed breaded goat cheese.  I also add some crispy shallots too.


It's amazing!

there are two that i make


italian:


artichoke hearts (one can quartered)


pimento (one can)


black olives (one can sliced)


red onion (as much as you like)


parm. cheese (as much as you like)


red wine vinegarette (l.f)


 


caribbean:


mandarian oranges (one can drained)


craisins (as much as you like)


feta (as much as you like)


chow mein noodles (optional)


chicken (optional)


raspberry vinegarette (l.f)

-pear
-walnuts
-red grapes
-raspberry vinegrette

best salad ever!!!



  • salad greens

  • julienned pears

  • crumbled blue cheese

  • dressing

this will make enough dressing for 2 salads so increase as needed:



  • 2T balsamic vinigar

  • 2t grainy mustard

  • 1t chopped fresh tarragon

  • 1t chopped capers

  • 1t olive oil

  • pepper to taste

Last night my boyfriend's mom made the yummiest salad!  It was very light so I ate a ton.


Spinach leaves, a few red onions (cut into rings), avocado, mandarin oranges, strawberries, and almonds.  With this dressing (which is also very light):
