This is a recipe for my newest breakfast invention. Please note that I am addicted to oatmeal, so always trying to come up with different ways of eating it. This recipe is great on a cold winter morning, and it really fills you up. At the same time, it is very high in fiber, low in fat and sugar, and very nutritious.
Pumpkin Pie in a Bowl (one serving):
1/2 cup of oatmeal (I prefer old fashioned, but can be quick) 1 cup of skim milk 1 big tablespoon of canned pumpkin 3 packets of sweetener (I use Sweet'n"Low, but any will do) pumpkin pie spice to taste cinnamon to taste
Microwave all ingredients in a bowl, then stir. Time depends on what consistency you prefer (short - runny oatmeal; long - dry oatmeal).
THIS THING IS FANTASTIC!!! If you like pumpkin pie, this is like eating pumpkin pie from a bowl, but so much less fattening.
