Yummiest Black Bean Soup

I made the yummies Black Bean soup yesterday, had to share the recipe!
In a slow cooker combine
3 Cans (15oz) low sodium black beans rinsed and drained
2 Cans (14oz) reduced sodium chicken broth
2 Cans (10oz) diced tomatoes with green chiles
1 Cup frozen chopped onion (ore-Ida)
1/2 cup diced carrots
1/2 cup diced celery
1 tablespoon paprika
2 teaspoons ground cumin
1 teaspoon bottled crushed garlic
1/2 teaspoon ground cloves
2 tablespoons balsamic vinegar

Cook on High for about 5 hours
Serve with a dollop of sour cream!

It's seriously delicious but has a definite spicy kick to it!

this sounds good...i was looking for a vegetarian meal. p.s. what are cloves?

I have no clue what cloves actually are but it's a seasoning MCCormick makes so you can just get a small container of it. It gives it a really nice spicey kind of flavor. You usually find regular cloves in ham if that helps.

Collette (or anyone else) - what would your recommend for a vegetarian stock?  I'm trying to stay away from meat, and would love to try this soup, but the chicken stock is a no no...

I would try a Swansons vegetable broth, they have sodium free too so it keeps with healthy aspect of the soup!

I would use Edward & Son's "Not-Chick'n" bouillon cubes to make the broth.
