Cooking Light Magazine

I discovered Cooking Light at the grocery store about a year ago and have been cooking and baking the recipes since then.  My husband lost a little weight and I'm fluctuating between 5 lbs less often then I used to.  They also have a website that has all of the recipes at cookinglight.com. 

My favorite recipes are:
-hot and sour soup
-sweet and salty chocolate peanut cookies
-homemade pizza
-blueberry cupcakes with lemon scented frosting

Anyone else use that magazine?  Any favorite recipes you want to share?

i love this mag so much - my sis got me a subscription for xmas.
so far i have tried and loved:
- baked eggplant dip
- farfalle w/ mushrooms in a creamy sauce
- mushroom risotto
- tilapia w/ orzo

i feel like i've tried so many but can't think of the names. i spend hours w/ a new mag!

Thanks for sharing those recipe names, Monica.  I'll definately check them out since they are non-meat (I haven't even tried 3/4 of the Cooking Light recipes I've made because they have meat in them for my carnivorous DH).  That farfalle creamy mushroom dish sounds especially good, I'm off to find that recipe for tonight!

Just wanted to thank you for the heads-up on the mushroom pasta dish.  I had it last night for dinner and the leftovers for lunch today and it was so unbelievably delicious.  YUM!

I'm trying the broccolli cheese soup tonight with the white bean sald with shrimp and arugula for dinner; they both got five-star reviews on the website...

I love that magazine also--I don't buy it all the time, but whenever I do, it's great!  Anyway, we have an issue from about 2 summers ago that was full of great recipes.  Two of my favorites were the cherry/jalapeno sauce (great on pork chops or chicken!) and the other is a brie and peach quesadilla with a lime and honey dipping sauce.  So good!

I tried this tonight and yummy!  The only thing I did differently was add some cut up top sirloin (my husband can't fathom a dinner without meat) and it was really good.  Next time I won't add the meat to mine though because it masked the flavor or the mushrooms too much, I ended up picking it out.

Also, it made a TON of food, we'll be having leftovers tomorrow evening and I'll probably end up having it for lunch a couple of times this week too.
